Alongside their fabulous Mai Tai, this is one of our favorite end-of-summer dishes. This Ahi Tuna Poke from the Ritz Carlton, Kapalua is the perfect way to bring all the beautiful bright flavors of summer into a dish that is light and delicious!

(Yields 1 serving)

Ingredients:

4 oz. Ahi Tuna cut into cubes

2 oz. togarashi aioli (aioli flavored with lime & togarashi spice)

1/4 cup tempura nibs

2 oz. Sweet onion (sliced)

pinch of hawaiian sea salt

.5 oz. Seaweed ogo

0.1 oz. Inamona (roasted kukui nut oil)

2 oz. Soy poke marinade (can purchase a similar one from asia grocery stores or online)

Preparation:

  1. In a bowl, combine ahi cubes, onions, ogo, inamona, salt, and poke marinade.
  2. Drizzle tempura nibs on mixture.
  3. Drizzle togarashi aioli on mixture.
